In Mondavio coexist the stories of five entrepreneurial activities that invested on the territory, on the most precious products of the earth and the fruits it offers spontaneously. Stories of people who reinvented themselves with originality and passion. Thus the cheese of Le Affinit\u00e0 Gustative is produced through the fantasy and the curiosity of Claudia Ridolfi, a young lady who put herself at stake and created a little workshop for maturing and improving the pecorino cheese. A new activity established in the underground ancient caves of Mondavio, where humidity seeps into the bones and muscles, with the smell of wet bricks and mildew, essential ingredients to obtain good products. Here eight different varieties of refined pecorino cheese are produced. The raw whole cheeses are placed into terracotta jars and covered with either leaves, or hay, bran, or even with Rosso Piceno wine: fruits of the earth which will saturate the cheese with their perfume and create new, inebriating flavours. In Mondavio there are also boundless olive groves of a variety called Raggia, or Raggiola: groves immersed into an idyllic landscape that make people feel confident. Here, in the Azienda Agricola Casa Merlaro, olives are ground immediately after harvest, with cold pressing to get eight mono-varieties of most high quality oils, such as Pendolino, Coroncina, Moraiolo. Oils with a fruited or spicy taste which keep the scent of the mill and make the mind recall virgilian, georgic memories, when olive oil was the trademark of the rural work and tradition. The philosophy of simplicity, of the return to healthy food, because \u201cthere is a relationship between what we eat and the way the world goes\u201d, is also at the basis of the activities of Fattoria Cuore Capanna, whose story tells the passion and the dedication of a family to the care of bees.
The production of honey of the Fattoria aims at the quality of its products, from the millefiori (a thousand flowers), acacia or coriander honey, to the delicious Nocciomiele (hazelnut and honey) and Cioccomiele (chocolate and honey) creams, where the fruit of the tireless work of bees joins dark chocolate, and the pollen of flowers, excellent with infusions and yogurt, but also delicious when melting in the mouth. At the Fattoria Cuore Capanna the wll-being of bees is a priority: the honey is collected in the honeycomb, never from the nest, to leave them all nourishment necessary for their good health. A sweet scent spreads out in the streets of Moldavio, rich with the fruited shades of raspberry or of pistachio, or the intense smell of truffle. It comes from the bars, the nut chocolate, the pralines that come to life from the hands of ma\u00eetre chocolatier Davide Marcantognini in his workshop. Those who enjoy for the first time the masterpieces of taste created here will no longer be satisfied with the supermarket chocolate bars. All products are fresh, with no preservatives, top quality, as Made in Italy as possible: Davide and his wife Daniela are chocolate artisans who chose the raw materials by selecting the best cocoa beans of South American farms, always aiming at creating as natural a product as possible. Pralines by the thin chocolate sheet surrounding a heart of hazelnut cream that melt in the mouth and spread in the whole body a feeling of wellness and satisfaction unique of its kind. A few kilometres off Mondavio, in Sant\u2019Andrea di Suasa, the beauty of the environment marks the inner soul of the wine produced by the Savelli Firm which, thanks to its Bellaluce \u201cever biological\u201d vineyard, offers to connoisseurs a pure raw wine. For centuries, in fact, here wine is produced without treating the ground with any kind of chemical fertilizers or pesticides. At the entrance of this firm, visitors are welcomed by a museum of ancient in-struments of rural life. Everything, here, transmits passion for history and love for local people\u2019s origins. In their storage room, both ancient and recently made barrels are kept. The red wine produced here is not marketed unless at least six years old.
