Wine artisans and truffles

Loved by the Romans, exalted and sung by poets and novelists, sought-after for the table of wealthy lords as a real diamond from the soil, truffle, the unquestioned prince of exquisite and typical recipes the Pergola tradition, attracts every year thousands of gourmets with its warm and aphrodisiac perfume, capable of exalting the taste of any course it is ground on. Pergola, “City of Truffle round-theyear”, celebrates it with two events: “the National Fair of the Renowned White Truffle”, in October, and AmiAmo il Tartufo a Pergola (Let us/me love the Truffle in Pergola) in June, the latter dedicated to the summer black truffle. In the Pergola territory, one of the most extensive where truffles may be found round the year, all varieties produced by Nature can be tasted. Matching truffle and a nice glass of Pergola DOC wine cannot be avoided.
A beautiful image is offered by the historic Grifoleto vineyard, the most ancient in the area, lost into a bucolic and idyllic scenery, where the perfumed and charming Pergola DOC wine, which derives from a variety of large black grape coming from Tuscany and the island of Elba, brought to town in the XIII Century. Here the artisans of the historic Villa Ligi Farm produce with passion, care and respect for the Nature this perfumed and tasty wine. Pergola is also dedicated to the production of Visciolato, created from sour black cherries, which are fermented in red structured wine from the previous grape harvest: a beverage many believe to be aphrodisiac. Joining this elixir with artisanal chocolate is, according to many expert gastronomes, an exceptional match. In the Serra Spinosa place, the Visciolato De.Co, is produced by the Gentilini Farm, established since more than one hundred years. In Christmas time, the most loved time of the year, Pergola proposes the “Cioccovisciola”, an event in which the taste of top quality chocolate and the inebriating flavour of Visciolato join and create a mixture of scents and pleasure that satisfies both the spirits and the senses.
