Where the real taste of traditional cuisine joins the inebriating perfume of wines

Fossombrone is the homeland of Bianchello del Metauro DOC, a fresh, harmonic white wine. A stop-over cannot be avoided, to taste it, at the Cantina Bucchini, which since more than fifty years produces this divine nectar, a fully native vine variety, typical of this territory, which does not care about fashions and habits and with its character, its perfume and its history, fully expresses the region’s tradition of quality. It is single vine variety product, also certified as organic: this is indeed how the family-run farm works, by relying on food, produced directly on the place, typical of a healthy farm diet. Not just wine, therefore, but also spelt, chickling, chickpeas, wheat, oil: products rich with love, tradition, respect for nature and for those who live with it, feed with its fruits and cultivate them. An elixir, that wine, to be enjoyed in front of a good tasty course of such Sunday meals as eel, river fish, salted codfish, dried cod… Proposals from the ancient tradition whose flavours can be tasted at the Osteria Zanchetti’s, in the very heart of Fossombrone, in Cesare Battisti street, precisely one of those alleys which in the past were filled with the voices of merchants and shopkeepers. The chef Luca Zanchetti’s project, who came back to Fossombrone after spending eighteen years working with the most important Italian chefs, is precisely to reinstate the ancient atmospheres.
Inside his restaurant, soon after crossing the door, fragrances, perfumes and pleasant smells tease the appetite of visitors, who are immediately immersed in the Thirties of last century: everything, here, is genuine and absolutely Italian, from the vintage furniture to napkins, towels, majolica dishes, to the charming and original lighting fixtures, the traditional ducal stars from Urbino. Not to mention the authentic tastes of good old times cooking, where all ingredients, all rigorously organic and in season, join to create a multicoloured palette of tastes, flavours and smells. Just a few covers, to create the familiar atmosphere of good old times dinners, when families joined to taste traditional courses which elsewhere have been perhaps lost.
